Lauren Lemos was born on Honolulu, Hawaii. Being the daughter of a career Naval officer, she has lived and traveled all over the world, experiencing a wide range of cuisine and hospitality from a very early age. She holds a BA in Theatre Acting from California State University Fullerton. She has worked in every restaurant FOH position for the last 19 years, ranging from corporate to mom-and-pop, to private events and catering environments. Los Angeles work includes: L&E Oyster Bar, The Ace Hotel DTLA, Umamicatessen, Lucques Catering, and Sweet Lady Jane, to name a few. With Italian roots, hospitality is in her blood. She met her husband and partner, Chef Peter Lemos, while working in a restaurant in 2012, where they fell in love and got married. Wax Paper Frogtown opened on December 3, 2015, and in 2018, a second location of Wax Paper opened in Chinatown. She and Peter will be opening their third spot, Lingua Franca, slated to open in the summer of 2021.
